Rainbow Swiss Chard is distinguished by its myriad of colors. It should be eaten raw or just lightly cooked so as to preserve their brilliant color and delicate texture.

You can use the young raw leaves and stems to add an earthy saltiness to green salad mixes. Or pair them with complimentary flavors like citrus, tomatoes, garlic, chickpeas, white beans, potatoes, cheese, cream, mushrooms, chili flakes, pine nuts, fennel and herbs such as basil.
